Burgundy-Hautes-Côtes-de-Nuits regional appellation area is spread over 19 villages of the Côte d'Or, between 300 and 400 meters above sea level. The vine that has the domain Emmanuel Giboulot is located in Villers-la-Faye under a small hill topped with a priory.

Aged 30 years, the vines are driven in high vines and cultivated biodynamically according to the philosophy of the field. The conversion to the biological principles of Emmanuel Giboulot is not due to an effect of fashion: this is how he practices since its installation in 1985, with an evolution in 1996 towards biodynamics.

After manual harvesting and sorting, the grapes used to make this Sous le Mont cuvée are de-stemmed and stewed for a gentle fermentation during a lunar cycle. The aging continues between 12 and 15 months, in barrels of three wines so that the tannins and the woody aromas do not mark the fruit and the soil.

This wine generally develops fresh aromas of red and black berries. Fine and elegant, it combines acidity and tannic structure in a fresh and fleshy mouth. An ideal partner for cold meats, pies, spicy dishes and local cheeses.

Drink rather young after a few hours in a carafe to promote the finesse of its aromatic expression.
