This is a full bodied organic Tuscan olive oil with intense flavours of green vegetables; green tomatoes and green olives. Spicy notes are evident on the palate but it is an extremely fruity olive oil with a rich and buttery texture.

Absolutely delicious drizzled over fresh pasta, steamed vegetables, soups, etc... or serve with grilled cibatta bread or indeed any fresh bread.

Paolo de Marchi treats his 25 to 100 year old olive trees (grown at 400 to 450 meters above sea level) with equally as much care and produces just a wonderful olive oil (a blend of Frantoio, Leccione and Moraiolo varieties). The olives are are hand picked early in the season, generally in late November and early December in order to retain the fruitiness and low acidity. These olives are immediately milled and cold pressed in a fast extraction. The oil is stored in small steel tanks in the cellars and is bottled in small lots. The average acidity is 0.25%.

The oil is slightly filtered in order to retain the maximum flavor, so a bit of a cloudy tint is entirely natural.
